The Making of a Cook, by Madeleine Kamman. Published in 1971 by Atheneum, New York. Cookbook about French cooking that aims to be accessible--and it think it succeeds, quite well! Wonderful chapter on souffles that I'm going to photocopy before I send this book to you. (Did you know that you should spoon the souffle into the baking dish, not pour it?) Hard cover with slightly battered dust jacket. 559 pages. Excellent vintage condition.
