Culinary Arts Institute Encyclopedic Cookbook, 1966 deluxe, revisded edition. First published in 1948. Says it has 2000 facts about food, but I would have guessed more! 974 pages (plus index) of menus, recipes, and basic charts and graphs, such as meat charts. Hardback book with thumb tabs. Excellent condition--dust cover is a bit tattered, but everything else is fine.
