Internationally Famous Cheese Melt Sandwich from A la Aspen, 1977: Here’s one great recipe from John Denver’s Aspen restaurant, The Tower Restaurant in Snowmass Mall. (I wonder if it is still here.)
Sure! We have the cookbook. See it here: https://www.vintagecookbook.com/product/a-la-aspen-recipes-aspens-great-restaurants-1977/

Many of these recipes are quite exotic. The Four Seasons at the Aspen Meadows provided recipes like lamb curry with fruit, zucchini au nutmeg, and mousse au cognac. The Golden Barrel provided lemon caper sauce, and oysters a la bailor. Loving’s provided braised veal chops with ham and parsley dressing, rataouille, and bouillabaisse. (Loving’s recipes are all two and three pages long!)
